EAST COLFAX

Situated at the corner of Colfax and Syracuse in the East Colfax neighborhood, our new headquarters features over 6000 square feet of space, with a large, airy coffee shop, roastery, training and cupping lab, and offices.

In designing the cafe portion we knocked out most of the facade of the building to bring in tons of natural light. We incorporated numerous plants from our 6th and Washington location, and tied it all together with natural and found wood items. We are using a La Marzocco Linea PB, a Fetco extractor and a Seraphim Pourover at this location as well.

On the back end, our roastery features two San Franciscan 25lb continuous batch roasters, and roughly 67,500 pounds of green storage space. The addition of a dedicated training and cupping lab will provide immense value in training our staff, as well as our wholesale customers. The space will also be used for public tastings and brew method classes.

6TH AND WASHINGTON

We opened our busy and lively retail location at the corner of 6th Avenue and Washington Street in 2001. Over the years Pablo's has become a community focal point, a place for people from all walks of life to assemble for coffee, conversation and friendship. 

We have two La Marzocco Linea PB ABV espresso machines pumping out thousands of perfect shots a day. Our drip coffee comes from a Fetco Extractor which has been programmed to perfectly portray our coffees. Also, every one of our excellent Single Origin offerings is available as a pourover via our Curtis Seraphim pourover brewer.

The east wall of the shop is dedicated to showcasing the many signature blends and single origin coffees we have available at any given time... usually between 15 and 20 different coffees! Our staff of professional Baristas are familiar with each of these coffees, and farm information is available for the asking.

13TH AND PENNSYLVANIA

Our shop in Capitol Hill is small, clean and fancy! We purchased the space formerly occupied by Penn Street Perk in July of 2012 and spent just shy of six months lovingly reworking every aspect of the shop. Incorporating a variety of textures and finishes such as beetle kill pine, huge walnut slab tables, new concrete floors, stainless counters and so forth, the design of this shop is much different than our lovingly worn flagship store.  

Our home in the Penn Garage building has an interesting history of it's own. Built in the 1880s, it was initially a livery stable. After the turn of the century, it became an electric automobile factory, and when the electric car lost out to the internal combustion engine the space became a mechanic shop. In the 1990s, the garage was converted into residential lofts and retail space.

We rock a La Marzocco Linea PB AVB at this location as well, and offer over a dozen different whole bean coffees every day.
